Crystalized Edible Snapdragon Flowers

What is a garnish? Is it the huge piece of parsley that is put on your plate when you order a hamburger or a rack of ribs at a simple chain restaurant? It very well can be, however if you are creating art; a garnish can be something so much more amazing!

My blog is called “Haute Bites”, the reasoning is very simple. Lets define “Haute Couture:

Haute couture is fashion that is constructed by hand from start to finish, made from high quality, expensive, often unusual fabric and sewn with extreme attention to detail and finished by the most experienced and capable seamstresses, often using time-consuming, hand-executed techniques.” LINK

I love to create high design fashionable plates (Haute Bites), so it is only fitting that in this  blog I show you exactly what type of detail creates Haute Bites! Garnishments are extremely important in order to do so! I am going to walk you through the exact simple steps to make this beautiful and tasty garnish.

I found edible flowers at the Natural Grocers in the produce section. You can probably find these edible flowers at a Wholefoods, Marczyks or any other specialty grocery stores.

SIDE NOTE: I experimented with my flowers. I wanted to see the difference between using fine granulated sugar and using sugar that I ran through the food processor for two minutes. Here are the results, you choose what type of flower you want.

And if you couldn’t see the difference well enough…. get glasses. (I am just kidding, I may be good with food, the camera is a different story)

What you need!

Ingredients

A package of edible flowers (I found Snapdragons) (rinse and pat dry before using. Make sure completely dry)

1 egg white

1 teaspoon of water

1 cup of sugar ( regular fine granulated or Sugar put through food processor, take your pick from pictures above)

A food paintbrush

Criss-Cross Metal Drying Rack

2 sets of chopsticks

A bottle of wine (for you to drink and share with friends who want to help)

Directions

SET UP:

In a small bowl whisk egg white with water until mixed well and a small layer of foam is on  top.

You can use regular sugar to get more of a corn flake texture and brighter color from the flower or for a more delicate lighter color flower use sugar that is ran through the food processor. (If you do the food processor, make sure to let the sugar rest before lifting the top and cover top with a towel to prevent inhalation of sugar powder.)

Pour your sugar in a separate bowl.

Make sure that you have a cooling rack ready close to where you set up the bowls.

WHAT TO DO:

Start by painting the inside of the flowers with egg white on a small clean pastry paint brush. Make sure to lightly paint the rest of the flower with the egg white wash. (SIDE NOTE: The egg white will preserve the flower so that you can store the flowers for a few months.)

Place the flower in the sugar bowl and cover/sprinkle the entire flower inside and out. (nook and crannies) Make sure to gently rub off any excess.

Place sugared flower on a drying rack and if you are painting snap dragons use a chop stick to keep the flower open while drying. (Picture below)

Adjust and position the flower to how you would like them to turn out when dried. Once dried the flower will crumble if you try to readjust it.

Let stand for 24 hours (or more) in a dry environment and place in a airtight container that will allow enough space between each flower. Store.

Simple, yet this entire process will take some time. So if you want to have a flower painting party, this is your perfect chance to gather friends and open a bottle of wine. You can use these flowers as a garnish on almost any dessert.(cakes, cupcakes, panna cotta, mousse, pastries, creme brulee … etc)  I used fresh flowers on the dessert below, however you can use these gorgeous crystallized flowers as a garnish instead.  Click for the dessert recipe  below
